Last weekend I got to meet Drew Campbell (author of The Latin-Centered Curriculum, Living Memory, and other books I've found useful) and his wonderful family. We met at a diner that had candy in a surprising number of the breakfast foods available. I woke up the next day craving that, so I invented this. We can't seem to get enough of these crepe-like European style pancakes.
1 cup milk
2/3 cup GF flour (I use Bob's Red Mill)
2 eggs
1 tbsp vanilla extract
1 tbsp powdered sugar
1 tbsp peanut oil
1/2 tsp of salt
white chocolate chips or whatever melty candy you want
Mix all the wet ingredients til bubbly, then add the dry ones and blend until non-lumpy.
I cover a smallish frying pan with butter (and make sure the pan is hot or they'll stick) before adding just enough batter to fill the frying pan. Lift the pan and turn it this way and that so all the excess batter comes out to the edges.
When they are firm at the edges, sprinkle about a dozen white chocolate chips (or whatever) in the center and fold them in half like an omelette so the chips melt in the middle.
